A representative dish of Colombia

The tamal are so traditional, that even in some songs they are named, to the sound of the tiple and the guitar. As in the case of the song Los Cucaracheros in the interpretation of Garzón and Collazos, which reads as follows: “He who has not gone to Monserrate with his girlfriend in Bogotá does not know what cinnamon or chocolate tamale is.” Tamal are generally made with dough made from corn (or rice depending on the region), chickpeas, chicken, bacon, eggs, and vegetables. The ingredients are wrapped in a banana leaf and steamed in a large pot for several hours.
In Bogotá, the most common tamale you will find is the Tamal Tolimense (from the Tolima region). You can recognize these delicacies by their shape; they are rounded and wrapped like a light bulb. The other type of Tamal that you will find in Bogotá is the Santafereño, which can be identified by its rectangular shape.
Fray Bernardino de Sahagún related a couple of omens about the preparation of the tamal. If it occurred to a man to eat the dough that was stuck to the pot, he ran the risk of missing his arrow shots in the war and in the case of the woman, it could affect his delivery. The omens around the making of the tamal continue to subsist, one of them and that you will be able to appreciate in the video that we attach at the end, is how it is believed that a person can damage the dough if his or her mood is not the best. The tamal was also described as a companion to wedding celebrations, the winter solstice and various festivals in honor of the gods, for each ceremony the tamal was different and had a specific name.
-1 pound breastplate corn cooked and ground
-2 large bell peppers cut into julienne strips
-1/4 annatto in pepa, prepared in 1/2 cup of lard. Both ingredients are put in a saucepan over low heat until the color is achiote.
-10 raisins and 10 capers.

-1 pound chickpea that has been soaked overnight.

In Colombia, we find a great variety of tamal recipes, which are mixed according to the tastes, ingredients and traditions of each region. Although it seems complicated, the tamale is a simple preparation: a dough wrap with meats, potatoes, vegetables and dressings to give more flabbbether.
